We were very fortunate to meet Matt Perger, World Champion Barista 2013 during a Coffee Masterclass conducted at Garage 51 by St Ali and Tourism Victoria.
The take-over of Garage 51 took place on 13 and 14 June between 11am to 2pm. Matt Perger worked alongside Garage 51 baristas in whipping up some of Melbournians’ familiar favourites such as flat whites, long blacks and espressos.
I really enjoyed the coffee sharing session, as Matt elaborated on the process from bean to cup. The processes involve both art and scientific research in between.
Matt ran us through a coffee sensory training. Just like wine tasting, we started by sniffing deeply, then loudly slurping the coffee so it spreads to the back of the tongue. Through tasting, we can differentiate the beans by its body, sweetness, acidity, flavour and after taste.
The coffee culture in Melbourne is so strong that the café scene there is buzzing, with a saying that there’s no bad coffee in Melbourne. When asked about his favourite cafes in Melbourne, Matt listed down St Ali Café South Melbourne; Auction Rooms Café in North Melbourne and The Palette Café in Richmond.
