Winter Specials and Signature Dishes at Hilton Kuala Lumpur

    I love winter in Japan, mainly for its seasonal offerings such as kani (crab), fugu (puffer fish) and shirako (cod’s sperm).  The best news is you can savour these winter delicacies at Iketeru, Hilton Kuala Lumpur.

    Head by Executive Chef Masami Okamoto, Iketeru prides itself on using the freshest of superior and seasonal ingredients to continuously deliver authentic culinary experiences to their guests. For the month of January (only), Iketeru is introducing Madara (cod fish) and Madara Kumono (cod fish roe). Madara/真鱈 can be found in Hokkaido and due to the cold weather, it is rich in healthy fatty oils, so the fish meat is delicate and flaky while its roe has a velvety, melt-in-mouth texture.

    Shirako Ponzu – boiled cod fish roe with ponzu sauce
    Served with grated daikon, ponzu sauce and spring onion, it is definitely a straight-up shirako eating experience! Briny and sweet, smooth and creamy; it is definitely a delicacy on its own.

    Shirako Chawan Mushi – Japanese egg custard with cod roe
    Chawan Mushi is a signature dish at Iketeru, and this version topped with shirako is just unbeatable! Silky smooth savoury soft egg custard subtly and delicately flavoured, yet packed with umami.

    Shirako Tempura – tempura cod fish roe
    This is recommended for shirako first timer, because anything deep fried in batter is bound to be infinitely more approachable. It’s crisp on the outside, creamy on the inside, just like having fried cheese.

    Tara Saiko Yaki – miso marinated grilled cod
    Delicious, moist, and tender cod marinated with Japanese miso and wrapped in houba leaf – what’s not to love? The tender and juicy cod literally melts in my mouth.

    Tara Chiri Nabe – cod fish hotpot
    Filled with seasonal vegetables and thick cut of cod slices, the nabe is so light and comforting.

    The Winter Specials & Signature Dishes menu is curated by Executive Chef Masami Okamoto and is available from 1 – 31 January 2020. Starting from RM42 nett, the menu comprises dishes carefully selected by Chef Masami where various cooking styles and ingredients are known to bring out the exquisite flavours of cod fish and cod fish roe.
