When we were there last few months, Italian wines were the main focus.
Tasca d’Almerita ‘Regaleali’ Nero d’ Avola offers nice fruity notes. On the palate, it is complex and supple, with a nice full body. What a great Sicilian red!
The menu is specially by Executive Chef Olivier Pistre. We started off with an exquisite Seared Hokkaido Scallop and Sunchoke Veloute with squid ink cracker. Chef always does his veloute perfectly – it was mildly flavored, rich, and creamy. The scallops were perfectly seared, with nice texture and sweet flavours. The squid ink crackers were amazing – bursting with flavours.
Our main of Slow Cooked Spicy Lamb Shoulder was being sous vide for 48 hours. The lamb was fork tender and full of flavour. In fact, chef uses a little bit of five spice powder that goes very nicely with the other seasoning.
Even the sides were interesting – banana stuffed onion and garlic gnocchi. Every layer of sweet, caramelised onion is being stuffed with sweet and creamy mashed bananas – I’m in heaven!
Chocolate Liegeois Revised “Caraibe Valrhona 66% Grand Cru” – Vanilla Ice Cream, Hot Chocolate Sauce, Chocolate Syphon, Sable Breton Crumble.
One of chef’s signature desserts. You can’t really go wrong with good quality bitter sweet chocolate and Ice Cream made with ‘real’ vanilla bean. What a perfect ending to our meal!
