Maggi Mee My Way – Instant Croquette

    I can still remember vividly those college days where grocery money was scarce and with exams around the corner there wasn’t just enough time to get a decent meal. Whenever I asked KampungBoy what’s for dinner, he will say nonchalantly “Maggi Mee lar”. FYI, Maggi Mee is often synonymous with instant noodles in Malaysia. We always half-jokingly claim that Maggi Mee is the most important bare essential food ever as it became a filling and nutritious meal when time is running out.

    Now that we’re all grown up, joined the work force and fell into the rat race, Maggi Mee still plays an integral part in our lives. The night before our 52nd monthiversary, KampungBoy was working late so we have to missed dinner. He sounded so apologitic so I thought why not cook something unusual for a romantic supper. There was nothing in the pantry except instant noodles, potatoes, cheese and some leftover onions. Mixed em’ up and I’ll have korokke (japanese croquette)! KampungBoy came home to discover the small lil’ surprise lying within.

    I’m glad to say that he liked it and survived it (no signs of food poisoning despite the wacky combination).

    Ingredients:

    2 medium potatoes

    1/2 onion, finely chopped

    1 egg

    1 packet of Maggi Mee Tomyam Flavour

    1 packet of breadcrumbs

    2 tbsp milk garlic butter vegetable oil for frying

    Preparation:

    1. Cook Maggi Mee according to packet instruction. Drain and dice finely when cold.

    2. Peel and cut potatoes into medium chunks. Boil potatoes until soften. Mash potatoes while they are hot.

    3. Saute onion with garlic butter in a medium skillet.

    4. Mix mashed potatoes, milk, onion and Maggi Mee in a bowl. Season with the tomyam flavoured seasoning.

    5. Make flat and oval-shaped patties. Dip in the beaten egg, then roll through bread crumbs.

    6. Fry each croquette in shallow oil until brown on all sides.

    Sounds easy right? You just need a packet of Maggi Mee, some potatoes and whatever handy in the kitchen. This could combat hunger for another few hours or so. ;p
