It’s fridge clearing day and I have to get rid of my stocks of food. I have a box of meat chunks residing at the inner corner of freezer, some (still) plump and juicy tomatoes, cucumber slices, one pinky potato, and quarter packet of cheese powder (I use it for like ENDLESSLY, shall buy a smaller packet next time)
KampungBoy had some grumbles that he had enough of mee and rice this few weeks. This causes headache to the chef, and suddenly I remember that I still have a packet of tortillas from Tesco remain unopened. Let’s try something MEXICAN today!
Cut the tomatoes into half, remove the seeds, stuff in some cooked meat chunks and potato cubes, sprinkle it with some cheese powder, and sent them into the ovens for 3-5 minutes.
Heat the tortillas in a non stick frying pan for few minutes, flip it a few turns in slow fire to get the crunchy outer layer.
Meat chunks + Pototoes + Grounded Black Pepper + Diced Red Pepper + Black Pepper Sauce + Mayo + Cheese Powder = Heaven!
Opssss..The wrappings are awful..It looks more like popiah than the usual tortillas that we had outside..However verdict from KampungBoy: Yummy-Licious!!..And he’s happily doing his dish washing now~!
Yum! That looks so good – I’m a great fan of tortillas! In fact I just remembered I have a packet of corn tortillas in the freezer. Must dig it out and have dinner next week.
