    Whenever we see dear chef Sapna Anand’s name on the menu, we know that we are in for a treat.

    Chef Sapna is collaborating with Hubba Hubba Ceylon to revamp their concept and to redesign the menu, and hence Goa By Hubba is born. The brand new menu looks so good, and we are expecting nothing less than from Chef Sapna, the queen of spices.

    Training chef and cookbook author Sapna Anand grew up in Goa, India and the cuisine in Goa is a perfect blend of diverse food cultures – the Konkan, the Portuguese and the Bahamani Nawabi traditions.

    We start with Papadum with Peanut and Moong Dhal Salsa. The baked papadums were crispy and non greasy at all, and they went really well with the peanut and moong dhal salsa.

    Chowpatty Fire Roasted Corn with chilli lime salt and herbed cheese dip.  Sweet corn on the cob with lime and salt is a famous street food along the famous Chowpatty beach. So good with the herbed cheese dip!!

    Garlic Methi Chicken Skewers – Garlic & Fenugreek chicken skewers, fire roasted and served with mint chutney.  It’s easy to rag on dry and flavourless chicken breast, but the truth is, in the right preparations like how they did it at Goa by Hubba, I love it so much!

    Paneer Pizza – an Indianized pizza topped with juicy, chunky paneer, crispy capsicum, spicy red pepper and onions- quite a mouthful!

    Spicy Chicken Lollipop – love the spicy and sweet glaze. What a perfect beer food!

    Snapper in Tumeric Leaf. Marinated in a Goan red paste, the snapper fish was mild, moist, and tender. So delicious!

    Mutton floss manta is another interesting creation from chef Sapna Anand.  The slow cooked spiced mutton was incredibly juicy and full of flavour. So good with a generous sprinkling of crispy shallots.

    I love vindaloo and this is a lip smacking good one! Goa by Hubba’s Beef Vindaloo was so tender and flavourful, so delicious with the Cranberry Rice.

    Garlic Butter Prawn with Fried Mantao. Can’t go wrong with this chinese-influenced dish at all!

    The specially curated cocktails were really good too – we had Masala Mantra, Rootin Tootin, Blue Basilico, Passion Play, Pandan Pixie and Spiked Mango Lassi.
