Nasi Bawang with Rendang Ayam

    Kampungboy has been pestering me for letting him to have nasi lemak since his recovery. I say I’ll cook him one to stop him from buying from the road side stall nearby.

    “Once bitten twice shy”, this doesn’t apply to him at all! SO he give me that doubtful eye like “Are you sure that you can cook nasi lemak?”. I’ll prove him wrong then! Not only nasi lemak, i came out with Rendang Chicken too!

    I wanted to try out the Tumeric Chicken Recipe from Malaysia Best, but the accountant inside Kgboy said that it is just not “cost effective” to do so, you use whole pot of oil just to deep fried 2 drumsticks and 1 chicken wings. True indeed, so we opt for chicken rendang instead.

    Rendang Chicken (for 2 person)

    Combine chicken, ground spices and fresh milk in an earthen pot and bring to a low boil. After it has boiled, lower the heat and simmer until the gravy turns thick. Keep stirring to prevent sticking.

    Add kerisik and mix well. Cook until meat is tender, gravy is thick and oil rises to the top. Add sliced leaves and seasoning.

    Ikan Bilis Rangup (Crunchy anchovies)
    Preheat the oven for 5 minutes. Place the cleaned and dry ikan bilis on the tray and sprinkle with some cooking oil. Leave it for 5 to 10 minutes.

    Nasi Bawang (onion rice)
    Heat the oil in a flat pan, add in chopped onions and fry them till the colour turned golden brown. Then pour in the grains and stir for another 5 minutes. Cook the grain with appropriate amount of water in a rice cooker.

    Verdict: Delicious!! The gravy is just nice, not too thick or diluted and it goes well with our fragrant nasi bawang. Will I make a second attempt on this? No thanks. I would rather buy it from my favourite nasi lemak stall because all the preparations are hectic and time consuming.
